The leaves, roots, flowers and extracts of dandelion all contain polysaccharides, and the root has the highest polysaccharide content, about 43%. The polysaccharide content in flowers and leaves is about 11% and 9%, respectively. Dandelion polysaccharides are composed of D-rhamnose, D-galactose, glucose, D-xylose and arabinose.

3. Phenolic acids

Phenolic acid compounds contain a variety of phenolic acids, including chlorogenic acid, caffeic acid, ferulic acid, p-coumaric acid, gallic acid, tartaric acid, etc. Foreign scholars have isolated and identified phenolic acids from dandelion roots, including vanillin, coniferaldehyde, and p-methoxyphenylacetaldehyde, and reported the antioxidant activity of phenolic acids. Dandelion phenolic acid has certain inhibitory effects on Staphylococcus aureus, Bacillus subtilis, Escherichia coli and Salmonella.

4. Terpene alcohols

Taraxadol is a triterpenoid pentacyclic compound with a wide range of sources. The triterpenoid components isolated from medicinal dandelion roots include taraxanthinol, pseudotaraxanthol acetate, taraxatrol, stigmasterol, sitosterol, balsamic resin and other compounds. After roasting dandelion roots, the content of terpene alcohols increased and the content of vitamins and proteins decreased. This shows that taraxanol has certain stability.
